Preferably blind with one hand? Or are they all equally fiddly monsters that will have me erasing the whole rest of the track if I don't unbuckle the machine and sit down and stare at the display (as seemed to be the case with a couple I looked at in store.) So yes, you could do it blindfolded whilst listening (in real-time of course). Most recorders also allow you to automatically add track marks at specified intervals too whilst recording (eg. after 5 minutes etc.)...
