Hi I have just purchased a new hi-fi installation and the cables are from Van den Hul. So I was looking on the internet to see what else thy have.

Well I found this one: http://www.vandenhul.com/cable/optocplr.htm

I have a md-deck (MDS-JE780) and record the music to the md on lp4 format via the standard optical cable. Now is may question: would I here any difference in the quality when I would use the MKII ore not?

On LP4 you won't notice a thing, you might as well be recording analog, to do these cables justice you would have to record something very demanding at SP, or PCM on Hi-MD.
